I noticed there are other projects:
http://www.ericr.nl/wondrous/index.html active in May 09 at least and http://www.ieeta.pt/~tos/3x+1.html active until Jan 09.
It appears that this project however is searching the largest numbers? Did we start at 1 or at where one of these projects left off? Are we progressing much more rapidly than they did/are?

Collatz started where 3x+1 left off. And we are already at numbers above 2^71, while the projects you linked are currently working around 2^61 or so. We are progressing faster (especially when Slicker will distribute the new app versions), but we do so by cutting some slack. We don't test for all parameters mentioned on these webpages, we just search for new path length record holders (and if the conjecture holds true or not).

What else is there besides path length and whether its true? I guess we can't plot path length and n because we only keep the records?
